Ingredients
- 1 lb chicken livers
- 3 tbsp schmaltz
- 2 onions
- 3 hard-boiled eggs
- 1/2 tsp salt (optional)
- 1/4 tsp black pepper
- 1 tbsp fresh lemon juice
- 2 tbsp finely chopped parsley (optional)
Steps
- Cover the eggs with water in a saucepan and boil them for 10 to 12 minutes until firm.
- Cool the eggs in cold water, peel them, and chop them.
- Melt the schmaltz in a large skillet over medium heat and cook the onions for 10 minutes.
- Add the chicken livers, salt, and pepper, and cook for 10 to 12 minutes until they reach 165 F.
- Cool the livers for 5 minutes, then chop them finely with the eggs.
- Stir in the lemon juice and parsley, and chill the mixture for 5 minutes.
