Ingredients
- 2 cups all-purpose flour
- 1 cup sugar
- 1 1/4 tsp baking powder
- 1/2 tsp salt
- 2 eggs
- 1 cup mashed ripe bananas
- 1/2 cup butter
- 1/2 cup 60% cacao bittersweet chocolate baking chips
- 1/4 cup chopped pecans
- 1/4 cup chopped maraschino cherries
Steps
- Heat the oven to 350 F and grease a 9-by-5-inch loaf pan.
- Whisk flour, sugar, baking powder, and salt in a large bowl.
- Stir eggs, mashed bananas, and melted butter in another bowl.
- Combine the wet and dry mixtures, then fold in chocolate chips, pecans, and cherries.
- Spread the batter in the pan and bake for 50 to 55 minutes, until a toothpick comes out mostly clean.
- Cool the bread in the pan for 15 minutes before slicing.
