Ingredients
- 1 lb plum tomatoes
- 1 tbsp vegetable oil
- 5 large eggs
- 1 tsp sesame seed oil
- 2 tsp chicken bouillon powder
- 2 tsp sugar
- 1/2 tsp pepper
- 1/4 tsp salt
- 1 spring onions
- 2 cups jasmine rice
Steps
- Cook the jasmine rice with water according to the package directions, then keep it covered for 5 minutes.
- Beat the eggs with salt and pepper in a medium bowl.
- Heat the vegetable oil in a large skillet over medium heat, add the eggs, and stir for 3 minutes until firm.
- Transfer the eggs to a plate, then cook the chopped tomatoes in the skillet for 6 minutes until softened.
- Stir the chicken bouillon powder, sugar, sesame oil, and eggs into the tomatoes, and cook for 3 minutes.
- Spoon the tomato and egg mixture over the rice and top with sliced spring onions.
