Ingredients
- 3 boneless skinless chicken breasts
- 1/3 cup all-purpose flour
- 2 eggs
- 1/4 cup milk
- 1/2 tsp kosher salt
- 1/2 tsp freshly ground black pepper
- 1 cup finely ground dry breadcrumbs
- 1/2 cup canola oil (optional)
- 2 tbsp butter
- flaky salt
- lemon (optional)
Steps
- Slice each chicken breast horizontally into two pieces, then pound them to an even 1/4-inch thickness.
- Season the chicken with salt and pepper.
- Place the flour in one shallow bowl, whisk the eggs and milk in another, and put the breadcrumbs in a third.
- Coat each chicken piece in flour, dip it in the egg mixture, and press it into the breadcrumbs.
- Heat the oil and butter in a large skillet over medium-high heat.
- Fry the chicken in batches for 3 to 4 minutes per side until golden and 165 F inside.
- Drain briefly and sprinkle with flaky salt.
