- 2 large chicken breasts
- salt and pepper
- 4 tbsp butter
- vegetable oil
- 1/2 cup unbleached all-purpose flour
- 2 eggs
- 1 1/2 cup plain
- lemon slices and fresh parsley
Steps
- Pound the chicken breasts to about one-quarter-inch thickness, then season both sides with salt and pepper.
- Set out separate shallow dishes of flour, beaten eggs, and plain crumbs.
- Coat each chicken piece in flour, egg, and crumbs, pressing gently so the coating sticks.
- Heat the butter and enough vegetable oil to cover a large skillet bottom over medium heat.
- Fry the chicken in batches for four to five minutes per side, until golden and 165 F inside.
- Drain briefly, then serve with lemon slices and fresh parsley.
