Ingredients
- 25 g butter
- 3 leeks washed and sliced
- 350 g tub fresh cheese sauce
- 1/2 bunch chives snipped
- 200 g cooked chicken torn
- 3 tbsp milk
- 1 tbsp dijon mustard
- 320 g pack shortcrust pastry
- plain flour for dusting (optional)
- 1 large egg beaten
Steps
- Heat the oven to 400 F.
- Melt the butter in a large skillet and cook the leeks for 10 minutes until soft.
- Stir in the cheese sauce, milk, and mustard, then simmer for 5 minutes.
- Fold in the chicken and chives, and divide the filling among four ramekins.
- Cover each ramekin with pastry and brush the tops with beaten egg.
- Bake for 30 minutes until the pastry is golden and the filling reaches 165 F.
