Ingredients
- 4 boneless skinless chicken breasts
- 3 tbsp olive oil
- 1 tbsp cajun seasoning
- 2 sweet potatoes
- 1 red onion
- 2 tbsp honey
- 4 cloves garlic
- 3/4 tsp salt (optional)
- 1/4 cup pecans (optional)
Steps
- Heat the oven to 425 F and line a large sheet pan with oil.
- Cut the sweet potatoes into small cubes, slice the onion, and mince the garlic.
- Toss the vegetables with two tablespoons oil, Cajun seasoning, and salt.
- Rub the chicken with the remaining oil and honey, then place it with the vegetables.
- Roast for 25 minutes, adding pecans during the last 5 minutes, until the chicken reaches 165 F.
