Ingredients
- 1/2 cup butter
- 1 cup peanut butter
- 1 tsp vanilla extract
- 2 cups confectioners' sugar
- 25 maraschino cherries with stems
- additional confectioners' sugar
- 2 cups semisweet chocolate chips
- 1/4 cup shortening
Steps
- Beat the butter, peanut butter, vanilla, and confectioners' sugar until a firm dough forms.
- Divide the dough into 25 pieces and flatten each piece around a cherry, keeping the stem uncovered.
- Roll the covered cherries in additional confectioners' sugar and chill them for 10 minutes.
- Melt the chocolate chips and shortening together in a heatproof bowl over gently simmering water.
- Dip each cherry ball into the melted chocolate and place it on a plate.
- Chill the coated cherry balls for 10 minutes, until the chocolate is firm.
