Ingredients
- 4 sweet potatoes
- 1 pinch coarse salt (optional)
- 1 pinch cracked pepper (optional)
- 3/4 cup shredded mozzarella cheese
- 1/2 cup parmesan cheese
- 2 tbsp fresh parsley
- 1/4 cup butter
- 1 clove garlic
- 1 tbsp fresh parsley
- 1 pinch salt (optional)
Steps
- Heat the oven to 425 F and line a baking sheet with foil.
- Halve the sweet potatoes lengthwise and place them cut side up on the baking sheet.
- Melt the butter with minced garlic, then brush it over the sweet potatoes.
- Bake for 25 minutes, until the sweet potatoes are nearly tender.
- Top with mozzarella, Parmesan, parsley, salt, and pepper, then bake for 5 to 8 minutes until melted and golden.
