Ingredients
- 250 g butter
- 250 g muscovado sugar
- 4 eggs
- 300 g plain flour
- 1 tbsp ground cinnamon
- 1 kg mixed dried fruit
- 200 g dried cranberries
- 2 oranges
- 150 ml chai tea
- 230 ml berry orange tea
- 230 g sugar
Steps
- Heat the oven to 325 F and grease an 8-inch square cake pan with some butter.
- Warm the chai tea and berry orange tea in a saucepan, add the dried fruit and cranberries, and soak for 10 minutes.
- Beat the remaining butter with the muscovado sugar, then beat in the eggs one at a time.
- Stir in the flour, cinnamon, orange zest, orange juice, and soaked fruit until a thick batter forms.
- Spread the batter in the pan and bake for 80 to 90 minutes, until a center pick comes out clean.
- Boil the remaining sugar with a little water and orange juice for 3 minutes, then brush it over the warm cake.
- Cool the cake for 10 minutes before slicing, keeping the total cooking time near 110 minutes.
