Ingredients
- 1/4 cup milk + 1 tsp apple cider vinegar
- 1 cup very overripe mashed banana
- 1/2 cup coconut sugar
- 2 large eggs
- 1/3 cup avocado oil
- 1 tsp vanilla extract
- 1 cup all purpose flour
- 3/4 cup whole wheat flour
- 1 tsp cinnamon
- 1 tsp baking soda
- 1/2 tsp fine sea salt
- 1/3 cup walnuts or pecans
- 1 cup freshly shredded carrot
- healthy cream cheese fosting (optional)
Steps
- Stir the milk and apple cider vinegar together and let them stand for 5 minutes.
- Heat the oven to 350 F and grease a 9-by-5-inch loaf pan with cooking oil.
- Whisk the banana, coconut sugar, eggs, oil, vanilla, and milk mixture in a bowl.
- Stir in both flours, cinnamon, baking soda, salt, walnuts, and carrot until just combined.
- Spread the batter in the pan and bake for 50 minutes, until the center is firm and a tester comes out clean.
