Ingredients
- 8 slices center cut thick bacon
- 1/2 cup brown sugar
- 2 1/4 cups flour
- 1/2 tsp baking soda
- 3/4 cup butter
- 1/2 cup white sugar
- 1 cup brown sugar
- 1 tbsp pure vanilla extract
- 1 whole egg
- 1 egg yolk
- 2 cups semi-sweet chocolate chips
Steps
- Heat the oven to 400 F and arrange the bacon on a baking sheet.
- Coat the bacon with 1/2 cup brown sugar and bake for 12 minutes, then cool and chop it.
- Reduce the oven to 350 F and beat the butter, white sugar, and remaining brown sugar until smooth.
- Beat in the vanilla, egg, and egg yolk, then mix in the flour and baking soda.
- Fold in the bacon and chocolate chips, then drop tablespoonfuls onto a baking sheet.
- Bake the cookies for 9 minutes, until the centers are set and the edges are lightly browned.
