3 tbsp extra-virgin olive oil
1/2 cup panko breadcrumbs
6 cups chopped romaine lettuce
1/2 cup finely grated parmesan cheese
2 large egg yolks
2 anchovy filets
2 garlic cloves
1 tbsp fresh lemon juice (optional)
1/2 tsp kosher salt
1/2 cup avocado oil
2 tsp worcestershire sauce
1/2 tsp freshly cracked black pepper

Steps

Whisk the olive oil, avocado oil, Worcestershire sauce, lemon juice, salt, and pepper in a small bowl.
Mash the anchovies and garlic into the dressing until smooth.
Stir in half the parmesan cheese until combined.
Toss the romaine with the dressing in a large bowl.
Top with the panko and remaining parmesan, then serve within 15 minutes.
