Ingredients
- 1 tbsp olive oil
- 1/2 small onion
- 2 ribs celery
- 1/2 tbsp garlic
- 1 large carrot
- 2 andouille or italian chicken sausage links
- 4 cups chicken broth
- 1 can (15 oz) crushed tomatoes
- 1 tsp dried thyme
- 1/2 tsp salt (optional)
- 1/2 head cabbage
- 3 tbsp fresh parsley
Steps
- Heat the olive oil in a large pot over medium heat, then cook the onion, celery, and carrot for 7 minutes.
- Add the garlic and sliced sausage, and cook for 5 minutes, until the sausage reaches 165 F.
- Stir in the broth, crushed tomatoes, thyme, and salt, then bring the mixture to a boil.
- Add the chopped cabbage, cover the pot, and simmer for 25 minutes, until the cabbage is tender.
- Stir in the parsley and season with pepper before removing the pot from the heat.
