Ingredients

3 zucchini
3/4 cup sabra basil pesto hummus
2 cups halved grape tomatoes
1/4 cup sliced red onion
2 tbsp chopped fresh basil
1 tbsp + more for topping extra virgin olive oil (optional)
2 tsp red wine vinegar
salt and pepper
1/4 cup panko breadcrumbs

Steps

Halve the zucchini lengthwise and scoop out a shallow center from each half.
Stir the tomatoes, red onion, fresh basil, vinegar, olive oil, salt, and pepper together in a bowl.
Spread the basil pesto hummus into the zucchini halves.
Spoon the tomato mixture over the hummus and sprinkle the panko breadcrumbs on top.
Chill the filled zucchini for 30 minutes before serving.
