Ingredients
- 2 cups cubed and cooked ham
- 1/2 cup chopped green onions
- 2 1/2 cups shredded cheddar cheese
- 8 soft taco flour tortillas
- 1 1/4 cup half-and-half
- 4 whole eggs
- 1 tbsp flour
- 1/2 tsp salt

Steps
- Heat the oven to 350 F and lightly oil a 9-by-13-inch baking dish.
- Fill each tortilla with ham, green onions, and 1 cup of the cheese, then roll and place seam-side down in the dish.
- Whisk the eggs, half-and-half, flour, and salt in a bowl until smooth, then pour the mixture over the tortillas.
- Top with the remaining cheese and let the filled dish stand for 5 minutes.
- Bake for 25 to 30 minutes, until the eggs are firm and the center reaches 160 F.
