Ingredients
- 1 salmon fillet
- 1/4 cup pineapple juice
- 3 tbsp brown sugar
- 1/4 cup beef bouillon
- 1 tsp black pepper
- 1/4 cup bourbon
- 1/4 cup soy sauce
- cornstarch (optional)
- 2 tbsp roasted peanuts
- 5 slices smoked bacon
Steps
- Cook the bacon in a 12-inch skillet over medium heat for 10 minutes, then drain it on a plate and crumble it.
- Simmer pineapple juice, brown sugar, bouillon, pepper, bourbon, and soy sauce in a small saucepan for 8 minutes.
- Heat the oven to 400 F and place the salmon on a lightly oiled small baking pan.
- Brush the salmon with half the glaze and bake for 12 minutes, until it flakes easily or reaches 145 F.
- Spoon on the remaining glaze and top the salmon with peanuts and crumbled bacon before serving.
