- 3 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1 tsp baking powder
- 1/4 tsp salt
- 1 large egg
- 1 1/2 tsp vanilla extract
- 1 cup unsalted butter
- 1 tbsp cornstarch
- 1/2 cup granulated sugar
- 1 1/2 tbsp lemon juice
- 4 cups fresh blueberries
Steps
- Heat the oven to 375 F and line a 9-by-13-inch pan with cooking oil and parchment.
- Mix flour, both sugars, baking powder, and salt, then cut in the butter until coarse crumbs form.
- Stir in the egg and vanilla until a crumbly dough forms, then press two-thirds into the pan.
- Toss blueberries with cornstarch, 1/2 cup sugar, and lemon juice, then spread them over the crust.
- Crumble the remaining dough over the berries.
- Bake for 45 to 50 minutes until golden and bubbling, then cool for 20 minutes before cutting.
