Ingredients

1 celery stick roughly chopped
2 lemons sliced
20 g tarragon
small handful of black peppercorns
10 very large prawns deveined
150 ml clamato tomato juice
100 g tomato ketchup
2 tbsp vodka (optional)
1 lemon juiced
tabasco to taste (optional)
2 tsp creamed horseradish
1 tsp tajin

Steps

Fill a 3-quart saucepan with water and add the celery, lemon slices, tarragon, and peppercorns.
Bring the water to a boil over high heat, then simmer it for 10 minutes.
Add the prawns and cook for 4 to 6 minutes until opaque and 145 F.
Drain the prawns and cool them for 5 minutes.
Stir the tomato juice, ketchup, vodka, lemon juice, Tabasco, horseradish, and Tajin in a bowl for 2 minutes.
Chill the sauce and prawns for 5 minutes before combining them.
