Ingredients
- 3/4 cup gluten-free flour blend
- 1/4 cup gluten-free oat flour
- 1 1/2 tbsp organic cane sugar (optional)
- 1/2 tbsp baking powder
- 1/4 tsp baking soda
- 1/4 tsp sea salt
- 2 1/2 tbsp cold coconut oil or vegan butter
- 1/3 cup unsweetened almond milk
- 1/4 cup pecans (optional)
- 24 oz fresh blackberries
- 2 tbsp organic cane sugar
- 1 tbsp arrowroot powder or cornstarch (optional)
Steps
- Heat the oven to 375 F and grease an 8-inch square baking dish with cooking oil.
- Toss the blackberries, 2 tablespoons sugar, and arrowroot powder in the dish.
- Mix the flours, 1 1/2 tablespoons sugar, baking powder, baking soda, and salt in a bowl.
- Cut in the cold coconut oil, then stir in the almond milk until a thick dough forms.
- Spoon the dough over the berries and sprinkle with pecans if using.
- Bake for 30 to 35 minutes, until the topping is browned and the berries bubble.
