Ingredients
- 3 large eggs
- 1 cup granulated sugar
- 1/4 cup light olive oil
- 2 cups all-purpose flour
- 2 1/2 tsp baking powder
- 1 tbsp lemon zest from 1 large lemon
- 1 tsp vanilla extract
- 1/3 cup seltzer water or club soda
- 10 oz mixed berries
- 3/4 cup all-purpose flour
- 1/4 cup granulated sugar
- 4 tbsp unsalted butter
- 1/4 tsp sea salt
Steps
- Heat the oven to 350 F and grease a 9-by-13-inch baking pan with cooking oil.
- Whisk the eggs, sugar, olive oil, lemon zest, vanilla, and seltzer water until blended.
- Stir in 2 cups flour and baking powder, spread the batter in the pan, and scatter the mixed berries over it.
- Rub the remaining flour, sugar, butter, and salt together until crumbly, then sprinkle the topping over the berries.
- Bake for 35 to 40 minutes until the center is firm and the topping is golden.
