Ingredients
- 1/2 large onion
- 1 tbsp olive oil
- 1 cup uncooked arborio rice
- 1 1/2 cups hot vegetable stock
- 1/2 cup beer
- 1/4 cup grated parmesan cheese
- 1/4 cup shredded sharp cheddar cheese (optional)
Steps
- Finely chop the onion and warm the olive oil in a large skillet over medium heat.
- Cook the onion for 5 minutes until softened.
- Stir in the arborio rice and cook for 2 minutes.
- Add the beer and stir for 3 minutes until mostly absorbed.
- Add the hot vegetable stock, 1/2 cup at a time, stirring until absorbed before each addition for 25 minutes.
- Stir in the Parmesan and cheddar, then cook for 3 minutes until melted and creamy.
