Ingredients
- 12 oz beer
- 2 1/4 cups flour
- 1 tsp baking powder
- 4 tsp sea salt (optional)
- 1 tsp cayenne
- 1 tsp garlic powder
- 1 1/4 lb fresh cod
- 3 1/2 cups canola oil or vegetable oil (optional)

Steps
- Heat 3 1/2 cups oil in a deep 5-quart pot to 350 F.
- Whisk 2 cups flour, baking powder, cayenne, and garlic powder in a bowl.
- Whisk in the beer until a smooth batter forms, then place the remaining flour in another bowl.
- Coat cod pieces in flour and batter, then fry batches for 4 to 5 minutes.
- Drain the fish and check that it flakes easily or reaches 145 F before serving.
