- 1 lb ground beef
- 1/2 large onion
- 1 clove garlic minced
- 1 package (1 oz) taco seasoning
- 1/2 cup salsa
- 1 bag (12 oz) frozen green giant riced cauliflower & sweet potato
- 1/2 cup water
- 1 can (15 oz) black beans
- 1 bag (10 oz) frozen green giant roasted corn
Steps
- Cook the beef, onion, and garlic in a large skillet over medium heat for 7 minutes, breaking up the beef until it reaches 160 F.
- Stir in the taco seasoning, salsa, and water, then simmer for 3 minutes.
- Cook the riced cauliflower and sweet potato in a second skillet over medium heat for 8 minutes.
- Heat the black beans and corn in a saucepan over medium heat for 5 minutes.
- Divide the cauliflower mixture among bowls, then top with beef, beans, corn, and shredded cheddar cheese.
