Ingredients
- 6 hard boiled eggs
- 1 lb ground pork
- 4 tsp bread crumbs
- 1 tsp thyme
- 1 tsp parsley
- 1 tsp fennel
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp nutmeg
- 1/4 tsp ground black pepper
- 1/4 cup unbleached all purpose flour
- 1 egg
- 1/2 cup breadcrumbs
Steps
- Heat the oven to 400 F and grease a baking sheet.
- Mix ground pork, bread crumbs, thyme, parsley, fennel, garlic powder, salt, nutmeg, and pepper.
- Divide the pork mixture into 6 portions and flatten each portion around one hard-boiled egg.
- Roll each covered egg in flour, dip it in the beaten egg, and coat it with breadcrumbs.
- Bake the Scotch eggs for 25 minutes, turning them halfway through.
- Check that the pork reaches 160 F before removing the eggs from the oven.
