- 4 cups shredded cooked chicken
- 2 cups sour cream
- 1 tbsp chopped chipotle peppers in adobo sauce
- 2 cups shredded monterey jack
- kosher salt
- 9 flour tortillas

Steps
- Heat the oven to 400 F and lightly oil a large baking sheet.
- Stir the chicken, sour cream, chipotle peppers, and salt in a large bowl.
- Spread the chicken mixture and shredded cheese over half of each tortilla, then fold the tortillas closed.
- Arrange the quesadillas on the baking sheet and brush their tops with oil if desired.
- Check that the thickest part of the poultry reaches 165 F before serving.
- Bake for 12 to 15 minutes, turning once, until the tortillas are crisp and the cheese melts.
