Ingredients
- 1/4 cup brandy
- 1/4 cup granulated sugar
- 1 orange
- 1 tsp fresh thyme
- to taste kosher salt & fresh ground black pepper (optional)
- 1 wheel camembert cheese
- 1 tbsp brandy
- 1 tbsp extra virgin olive oil
- serving suggestions: crostini
Steps
- Heat the oven to 350 F and place the Camembert in a small ovenproof dish.
- Simmer the brandy, sugar, cranberries, orange zest and juice, and thyme in a saucepan for 8 minutes.
- Season the cranberry mixture with salt and pepper, then spoon it around the cheese.
- Drizzle the cheese with the remaining brandy and olive oil.
- Bake for 8 to 10 minutes, until the cheese is soft and the cranberries are bubbling.
