Ingredients
- 2 aubergine
- 2 tbsp vegetable oil
- 3 sliced thinly bread
- 300 g hummus
- 100 g walnuts
- 40 g parsley
- 200 g cherry tomatoes
- juice of 1/2 lemon
- 1 splash extra virgin olive oil
Steps
- Heat the oven grill to high and slice the aubergines lengthwise, the bread thinly, and the tomatoes in half.
- Brush the aubergine and bread with vegetable oil, place them on a large baking tray, and grill for 5 to 7 minutes per side.
- Grill until the bread is crisp and the aubergine is soft, turning the pieces once.
- Spread hummus over the grilled bread, then top with aubergine, tomatoes, walnuts, parsley, lemon juice, and extra virgin olive oil.
