Ingredients
- 1 sliced aubergine
- 3 tbsp olive oil
- 140 g couscous
- 225 g vegetable stock
- 200 g cherry tomatoes
- 1 handful mint
- 100 g goats cheese
- juice of 1/2 lemon
Steps
- Heat the oven to 425 F and toss the aubergine with 2 tablespoons olive oil.
- Roast the aubergine on a baking sheet for 22 minutes, turning halfway.
- Bring the vegetable stock to a boil, stir in the couscous, cover, and rest for 5 minutes.
- Fluff the couscous with a fork and stir in the remaining olive oil and lemon juice.
- Fold in the roasted aubergine, tomatoes, mint, and goat cheese.
- Rest the salad for 5 minutes before serving.
