Ingredients
- 6 oz dry fettuccine noodles
- 8 oz asparagus
- 1 tsp olive oil
- salt (optional)
- 2 tbsp butter
- 1/2 cup heavy cream
- 3/8 cup freshly grated parmesan cheese
- 1 tsp lemon juice
- 1/2 tsp garlic powder
- 1/4 tsp salt
- 1/8 tsp black pepper (optional)
- 1 tbsp pesto
Steps
- Bring a large pot of salted water to a boil.
- Cook the fettuccine until almost tender, add the asparagus for the last three minutes, then drain and reserve one-half cup water.
- Melt the butter with the olive oil in a large skillet over medium heat.
- Stir in the cream, garlic powder, salt, and pepper, and simmer for three minutes.
- Add the pasta, asparagus, Parmesan, lemon juice, pesto, and enough reserved water to coat, then toss for two minutes.
