Ingredients
- 6 chicken thighs
- 1/3 cup rice wine vinegar
- 1/4 cup soy sauce
- 3 tbsp honey
- 2 tbsp brown sugar
- 2 tbsp pure sesame oil
- 4 cloves garlic
- 1 tsp crushed ginger
- 2 bunches baby bok choy
- 1 stem sliced green onion/shallot (optional)
Steps
- Heat the oven to 425 F and lightly oil a 9-by-13-inch baking dish.
- Whisk the vinegar, soy sauce, honey, brown sugar, sesame oil, garlic, and ginger in a small bowl.
- Place the chicken thighs in the dish, pour the glaze over them, and bake for 30 minutes.
- Add the bok choy around the chicken and bake for 10 to 15 minutes, until the chicken reaches 165 F and the bok choy is tender.
- Spoon the pan glaze over the chicken and top with sliced green onion if using.
