- 3 apple
- 14 1/8 oz rhubarb stalk
- 1 tbsp fresh ginger
- 2 tbsp granulated sugar
- 1/2 tbsp cornstarch
- 1/4 tsp five spice powder
- 1 1/2 cup all-purpose flour
- 1/4 cup granulated sugar
- 1 tbsp baking powder
- 1/4 tsp salt
- 2 2/3 oz unsalted vegan butter
- 1/2 cup unsweetened soy yogurt
- 1 tsp pure vanilla extract
Steps
- Heat the oven to 375 F and grease a 9-inch square baking dish with cooking oil.
- Chop the apples and rhubarb, then mix them with ginger, sugar, cornstarch, and five-spice powder in the dish.
- Bake the fruit for 10 minutes.
- Mix the flour, sugar, baking powder, and salt, then cut in the vegan butter.
- Stir in the soy yogurt and vanilla to make a soft dough.
- Drop spoonfuls of dough over the hot fruit and bake for 25 to 30 minutes, until golden and bubbling.
