Ingredients
- 1/2 cup extra-virgin olive oil
- 9 cured anchovy fillets
- 6 tbsp finely-chopped fresh flat-leaf curly parsley
- 3 tbsp finely-chopped fresh rosemary
- 3 tbsp finely-chopped fresh thyme
- 3 tbsp finely-chopped fresh mint
- 1/8 tsp freshly-ground black pepper
Steps
- Finely chop the parsley, rosemary, thyme, and mint.
- Mash the anchovy fillets with the olive oil in a medium bowl.
- Stir in the chopped herbs and black pepper.
- Cover and let the sauce rest at room temperature for 30 minutes.
