Ingredients
- 1 sized potato
- 1/2 cup yogurt
- 1 clove garlic
- 1 tbsp lemon juice
- salt (optional)
- 1 tbsp clarified butter
- 2 tsp dried mint
- 1 tbsp pine nuts (optional)
- fresh mint leaves (optional)
- cumin powder (optional)
- paprika powder (optional)
Steps
- Pierce the potato and microwave it on high for 5 to 7 minutes, turning halfway, until soft.
- Scoop the hot potato into a bowl and mash it with the yogurt, garlic, lemon juice, and salt.
- Warm the clarified butter in a small skillet over medium heat for 1 minute.
- Stir the dried mint and pine nuts into the butter and cook for 1 minute.
- Spoon the butter mixture over the potato and sprinkle with fresh mint, cumin, or paprika if using.
