Ingredients
- 1 jar (8 1/2 oz) sun-dried tomatoes packed in olive oil
- 2 cloves garlic
- 1/2 tsp salt
- 1/4 tsp crushed red pepper flakes
- 1/2 tsp sugar
- 1 cup packed fresh basil leaves
- 1/4 cup + 2 tablespoons pine nuts
- 1/3 cup freshly grated parmigiano-reggiano
- 2 tbsp water
- 8 slices italian bread
- 4 tbsp softened butter
- 8 oz fontina or gruyere
- 1/2 cup sun-dried tomato pesto
Steps
- Blend the sun-dried tomatoes, garlic, salt, red pepper, sugar, basil, pine nuts, Parmesan, and water into a pesto.
- Spread pesto on four bread slices and top each with cheese.
- Close the sandwiches and butter the outer sides of the bread.
- Heat a large skillet over medium heat.
- Grill the sandwiches for 3 to 4 minutes per side, pressing gently, until the bread is golden and the cheese melts.
