- 1/2 small onion
- 1 clove garlic
- 1 cup broccolini
- 1 cup cheddar cheese
- 2 tbsp olive oil
- salt and pepper (optional)
- 4 chicken breasts
Steps
- Heat the oven to 400 F and lightly oil a 9-by-13-inch baking dish.
- Chop the onion, garlic, and broccolini, then mix them with the cheddar, olive oil, salt, and pepper.
- Cut a deep pocket into each chicken breast without slicing through the sides.
- Fill each pocket with the broccolini mixture and place the breasts in the baking dish.
- Bake for 25 to 30 minutes, until the centers reach 165 F.
- Rest the chicken for 5 minutes before serving.
