This is usually served as a side or part of a meal, so the price per serving is low for a full dinner.

Ingredients

  • 1 cup uncooked rice
  • 1 large green cabbage or 2 small green cabbage
  • 2 tbsp butter or 2 tablespoons extra virgin olive oil
  • 1 large onion
  • 2 1/2 cloves garlic

  • coarse salt
  • fresh ground pepper
  • 2 cans tomato sauce
  • 1/4 cup brown sugar (optional)
  • 3 tbsp freshly squeezed lemon juice (optional)
  • 1/2 cup sour cream (optional)

Steps

  1. Cook the rice in salted water until barely tender, about 12 minutes, then drain it.
  2. Boil a large pot of salted water, remove the cabbage leaves as they soften, and cool them briefly.
  3. Heat oil in a large skillet, then cook the chopped onion, garlic, bell pepper, and celery for 5 minutes.
  4. Mix the cooked vegetables, rice, parsley, beef, pork, salt, and pepper in a large bowl.
  5. Place about 2 tablespoons of filling on each cabbage leaf, fold in the sides, and roll tightly.
  6. Spread tomato sauce in two baking dishes, arrange the rolls seam-side down, cover with more sauce, and bake at 350 F for 75 minutes until the filling reaches 160 F.
