Ingredients
- 5 lb fresh ham
- 1/4 cup black peppercorns
- 2 bay leaves
- 1 knob fresh ginger
- 2 star anise
- 1 handful cloves
- 2 cloves garlic thinly sliced
- 1/2 orange
- 2/3 cup honey
- 1 1/2 cups brown sugar
- 1 red jalapeño pepper
- 1 tsp five-spice powder
- 1/2 cup soy sauce
- kosher salt and freshly ground black pepper
Steps
- Heat the oven to 325 F and place the ham in a roasting pan with 1 inch of water.
- Add the peppercorns, bay leaves, ginger, star anise, cloves, garlic, orange half, salt, and pepper around the ham.
- Cover the pan and roast for 125 minutes, or until the thickest part reaches 145 F.
- Simmer the honey, brown sugar, jalapeño, five-spice powder, soy sauce, and pan juices in a saucepan for 10 minutes.
- Brush the glaze over the ham and roast uncovered for 10 minutes, then rest it for 5 minutes before slicing.
