Ingredients
- 2 tbsp extra virgin oil
- 1/2 lb extra-lean ground turkey
- 2 cloves garlic
- 3/4 cup yellow onion
- 1/2 cup celery
- 1/2 cup red pepper
- 1 tsp dried parsley
- 1 cup sweet potato
- 5 cups vegetable broth
- 2 cups spinach
- 1 pinch cayenne pepper
- salt and pepper
Steps
- Heat the oil in a 5-quart pot over medium heat.
- Cook the onion, celery, and red pepper for 5 minutes, until softened.
- Add the turkey and garlic, then cook for 7 minutes, breaking up the meat until it reaches 165 F.
- Stir in the parsley, sweet potato, broth, cayenne, salt, and pepper.
- Simmer the soup for 10 minutes, until the sweet potato is tender.
- Stir in the spinach and cook for 3 minutes, until wilted.
