1 tbsp cornflour
single light cream (optional)

Steps

Heat the vegetable oil in a 4-quart pot over medium heat.
Add the shallots, leek, garlic, bay leaf, chili flakes, and black pepper, then cook for 5 minutes.
Add the tomatoes, tomato paste, and stock, then simmer uncovered for 20 minutes.
Mix the cornflour with 2 tablespoons water, stir it into the soup, and cook for 3 minutes.
Remove the bay leaf, stir in the coriander and cream, and season with salt.
