Ingredients
- 1/3 cup rice vinegar
- 1/3 cup soy sauce
- 1/4 cup water
- 3 tsp fresh grated ginger
- 2 cloves garlic
- 1 tsp light brown sugar
- 8 tbsp peanut butter
- 2 tbsp olive oil
- 5 tbsp sesame oil
- 1/4 tsp hot pepper sauce or 1/4 teaspoon chili pepper flakes
- 1 lb pasta
- 2 cups chopped broccoli
- 1 cucumber
Steps
- Boil the pasta in a large pot of salted water for 8 minutes, adding broccoli during the last 3 minutes.
- Whisk peanut butter, rice vinegar, soy sauce, water, ginger, garlic, brown sugar, olive oil, sesame oil, and hot pepper sauce in a medium bowl.
- Drain the pasta and broccoli, reserving 1/4 cup cooking water.
- Toss the hot pasta and broccoli with the sauce, adding cooking water as needed to loosen it.
- Slice the cucumber and fold it into the noodles before serving.
