Ingredients
- 12 small white potatoes
- 1 tbsp extra virgin olive oil
- 1/2 tsp garlic powder
- 1/2 tsp cumin
- 1/2 tsp smoked paprika
- 1/2 tsp kosher salt
- 1/4 tsp chili powder
- 1/4 tsp freshly ground black pepper
- 10 oz 1 container sabra supremely spicy hummus
- alfalfa sprouts and/or thinly sliced green onions for garnish (optional)
Steps
- Heat the oven to 425 F.
- Halve the potatoes and coat them with oil, garlic powder, cumin, smoked paprika, salt, chili powder, and pepper.
- Arrange the halves cut-side down on a baking sheet and roast for 25 minutes, until tender.
- Cool the potatoes for 5 minutes, then scoop shallow centers from each half.
- Fill each potato cup with hummus and garnish with sprouts or green onions.
