Ingredients

1 tbsp sunflower oil
1 onion
1 red chilli
2 tsp curry powder
300 g cherry tomatoes
500 g potatoes
bunch coriander
8 egg

Steps

Peel and slice the potatoes, then simmer them in a saucepan of water for 10 minutes until nearly tender.
Drain the potatoes and heat the sunflower oil in a 10-inch oven-safe skillet over medium heat.
Cook the onion and red chili for 6 minutes, then stir in the curry powder and cook for 1 minute.
Add the potatoes and tomatoes, and cook for 5 minutes, stirring gently.
Whisk the eggs with salt and pepper, pour them into the skillet, and cook for 3 minutes.
Heat the oven to 400 F and bake the tortilla for 10 minutes, until firm and the eggs reach 165 F.
Sprinkle the chopped coriander over the cooked tortilla.
