Ingredients

3 cups + 1/3 cup
3 cups water
12 oz bucatini
2 tbsp extra virgin olive oil
1 1/2 tbsp minced garlic
1/2 tsp red pepper flakes
1/4 cup chopped parsley
freshly grated parmesan
5 soft boiled eggs

Steps

Boil water in a large pot, salt it, and cook the bucatini until tender, about 9 minutes.
Heat the olive oil in a large skillet, then cook the garlic and red pepper flakes for 1 minute.
Drain the pasta, reserving 1/3 cup cooking water, and add both to the skillet.
Toss in the parsley and Parmesan, then cook for 2 minutes until glossy.
Top the pasta with the soft-boiled eggs before serving.
