Ingredients

1 sliced onion
1 sliced red pepper
1 sliced green pepper
50 g chorizo
2 cloves minced garlic
1 tblsp olive oil
250 g basmati rice
400 g tinned tomatos
200 g prawns

Steps

Heat the olive oil in a large heavy pot over medium heat.
Cook the onion, red pepper, green pepper, and chorizo for 8 minutes, stirring often.
Add the garlic and rice, then cook for 2 minutes while stirring.
Stir in the tomatoes and 300 milliliters water, then simmer covered for 20 minutes until the rice is tender.
Nestle in the prawns, cover the pot, and cook for 5 minutes until they are opaque and 145 F.
Cook sausage until it reaches 160 F inside.
Remove the pot from the heat and let it rest covered for 5 minutes.
