Ingredients
- 3 sweet potatoes
- 1 tbsp vegetable oil
- 5 tbsp butter
- 3/4 cup sugar
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1 large egg
- 1 tsp vanilla
- 2 1/4 tsp baking powder
- 3 tbsp heavy cream
- 1 unbaked pie shell
Steps
- Heat the oven to 400 F.
- Rub the sweet potatoes with vegetable oil and roast them on a baking sheet for 45 minutes.
- Cool the sweet potatoes for 5 minutes, then peel and mash them in a large bowl.
- Beat in the butter, sugar, cinnamon, nutmeg, egg, vanilla, baking powder, and cream.
- Pour the filling into the unbaked pie shell.
- Bake the pie at 350 F for 35 minutes, until the filling is set and the egg is firm.
