Ingredients
- 3 large sweet potatoes
- 4 oranges
- 3/7 cup brown sugar
- 1/2 tsp cinnamon
- 1/4 tsp ginger
- 1/4 tsp nutmeg
- 1/4 tsp allspice
- 1/8 tsp ground cloves
- 1/3 cup brandy or spiced rum
- 2 tbsp unsalted butter
Steps
- Heat the oven to 375 F and butter a 9-by-13-inch baking dish.
- Peel the sweet potatoes and cut them into 1-inch slices.
- Juice the oranges and whisk the juice with brown sugar, cinnamon, ginger, nutmeg, allspice, cloves, and brandy.
- Arrange the potatoes in the dish, pour the orange mixture over them, and dot with butter.
- Cover the dish and bake for 40 minutes, then uncover and bake for 20 to 25 minutes more, until tender and glazed.
