Ingredients
- 1 lime
- 1/2 cup granulated sugar
- 1/4 cup melted and cooled coconut oil
- 1 egg
- 1 tbsp fresh lime juice
- 1/4 tsp almond extract
- 1 cup fine blanched almond flour
- 2 1/2 tbsp coconut flour
- 1/4 tsp baking soda
- 1/4 tsp salt
- 1/4 cup granulated sugar
- 1/2 cup powdered sugar
- 1 tbsp fresh lime juice
- extra lime zest (optional)
Steps
- Heat the oven to 350 F and line a baking sheet with parchment or lightly oil it.
- Mix the lime zest, one-half cup sugar, cooled coconut oil, egg, lime juice, and almond extract in a bowl.
- Stir in the almond flour, coconut flour, baking soda, and salt until a soft dough forms.
- Shape the dough into 12 balls, roll them in the remaining one-quarter cup sugar, and place them on the baking sheet.
- Bake for 10 to 12 minutes, then cool for 5 minutes.
- Whisk the powdered sugar with the remaining lime juice and drizzle it over the cookies.
