Ingredients
- 12 oz smoked salmon
- 1 small onion
- 1 1/2 lb russet potatoes
- 1 1/2 lb fresh beets
- 1 lb carrots
- 4 large hardboiled eggs
- 1 cup mayonnaise (optional)
- 1 tbsp green onion (optional)
Steps
- Peel and grate the cooked potatoes, beets, and carrots separately, then chop the onion and eggs.
- Spread the potatoes in a deep 9-by-13-inch dish as the first layer.
- Add the smoked salmon and onion, then spread on half the mayonnaise.
- Layer on the carrots, beets, and remaining mayonnaise.
- Top with the chopped eggs and green onion, cover, and chill for at least 75 minutes.
