Ingredients
- 3 tbsp unsalted butter
- 87 g granulated sugar
- 1 large egg white
- 1/2 tsp vanilla extract
- 60 g all-purpose flour divided evenly into two small bowls
- 1/2 tsp baking powder
- 1/8 tsp salt
- 1/4 cup plus 1 tbsp milk
- 1/2 cup unsalted butter
- 1 1/2 cup powdered sugar
- 1/2 tsp pure vanilla extract
- 1 1/2 tbsp heavy cream
- teeny pinch of fine salt
Steps
- Heat the oven to 350 F and line six cups of a muffin pan.
- Beat the 3 tablespoons butter and sugar until creamy, then mix in the egg white and vanilla.
- Whisk the flour, baking powder, and salt separately, then add them to the butter mixture with the milk.
- Divide the batter among the six cups and bake for 16 to 18 minutes until firm.
- Cool the cupcakes completely on a rack.
- Beat the remaining butter, powdered sugar, vanilla, cream, and salt until smooth, then frost the cupcakes.
